Kitchen Witch: Libra Recipes

Food plays such a big role in our bodies staying balanced. Rustic harvest bases mixed with fresh citrus and herbs can help keep you in a great mood all through Libra season.

I am a firm believer that food should be easy to make, but still taste good. Everything below takes about 30-40 minutes to make, including prep.

Smoked Duck With Sage And Lemon

  1.  Smoked Duck breast - since these are pre-cooked all you need to do is heat it up.
  2.  Slice a lemon and lay on a frying pan over medium heat.
  3.  Place fresh sage leaves on top of the lemon.
  4.  Poke a few holes in the skin of the duck breast.
  5.  Lay on top of the sage and lemon.
  6.  Heat for 10 minutes on each side.
  7.  Discard cooked lemon and sage and serve on fresh lemon slices.

Baby Ruby Potatoes

  1. Pre-heat oven to 450F.
  2. Wash 1lb of baby ruby potatoes thoroughly.
  3. Chop 1 small yellow onion.
  4. Peel 6 cloves of garlic.
  5. Chop 2 sprigs of fresh rosemary.
  6. Mix everything in a bowl with 2 tbsp of olive oil.
  7. Cook in a roasting pan for 25-30 minutes.
  8. Serve immediately.

Roasted Lemon Brussel Sprouts

  1. Pre-heat oven to 450F.
  2. Chop rough ends off washed Brussel sprouts. Slice into halves.
  3. Line a roasting pan with olive oil and place sprouts with the inside facing down.
  4. Squeeze half a lemon over the tops of the sprouts.
  5. Cook for 20 minutes.
  6. Serve with lemon slice.

Libra Sangria (not pictured because I drank it all - oops!)

  1. Grab a pitcher that holds atleast 2.5 litres.
  2. Mix 1 bottle of Merlot with 2 cups of fruit punch and 1 cup of soda water.
  3. Add sliced lemon and chopped strawberries (about 14).
  4. Mix. Chill. Drink.
